Dinner for Three!

We were in need of a girly night in and we wanted to put our cooking skills to the test! We had something simple in mind and came to the perfect decision... A sparkling drink, Bruschetta to start us off and some Pasta as a main! I know, it sounds so simple - but we jazzed it up by putting our own spin on things!

First things first - Laying the table!


Edward (My twin) was in charge of the pasta, risky, but we gave him a chance! We started off by heating up the water, we added a pinch of salt and a tea spoon of oil. This helps to prevent the pasta from being sticky. After waiting for the water to boil, we then added a considerable amount of penne pasta! After 7 minutes we started preparing the sauce. Ingredients; A whole pot of Waitrose's Tomato and basil sauce, pesto (1.5 tsp), Parmesan (handful),  salt & pepper and extra basil!. Remember to use a non-stick sauce pan, we add all the ingredients and keep stirring until the sauce begins to bubble gently. When the pasta had boiled perfectly, we the poured the pans contents into a colander, rinsing the pasta delicately. Then we put the pasta back inside its old pan and added the sauce, we did this as it uses up the excess starch in the pan to add extra flavour. Meanwhile, we were also frying the small pancetta chunks. When everything was done we added the pasta to the center of our plates, layered some cheddar cheese on top and sprinkled the pancetta.




Next! It was time to make the one and only Bruschettta! I was in charge.... scary!
This was our first time ever attempting to make Bruschetta! Success! First we started by roughly chopping the tomatoes into small pieces, then we put them into a vacant gravy jug, these are perfect for mixing round the tomatoes. Our indedients; tomatoes, salt, pepper, oil, pesto and toasted pine kernels! So simple! We then sliced the ciabatta and grilled them until they were adequately crispy, but not too grilled and dry (avoid the dark brown colour, if you've seen this you may have to start the bruschetta cooking process again, so beware!





Our two elements were both prepared and ready to be sensational! We evenly spread the tomatoes on the ciabatta and lined them onto a serving plate!


Lastly, the drinks! We decided on something soft, but we wanted to experiment! We did this roughly, not measurements needed! Ingredients; Apple juice, Elderflower juice, ice and to add some glam, we cut up an apple and use a slice as decoration - which we later ate!
Lovely drink, if you feeling something light and non-alcoholic!



Simple is often Best. So the meal went down a treat! We would 100% recommend everyone give this a try as its so quick and easy yet absolutely delicious. Thumbs up!
